Frédéric Savart

This Champagne house was founded after the II World War by René Savart in Écueil. The production was initially dedicated to own consumption. Daniel, the son of René, then took over in the 1970s, where he let the family name be part of the company name: Champagne Daniel Savart. The property grew during the 1980s to the 4 acres now under production. The son Frédéric started working with his father during the 1990s and gradually took over the entire production responsibility at the beginning of the next millennium. After 2005, Frédéric became fully responsible for the whole process and changed and put his personal stamp on the wines.

Champagne Frédéric Savart is located in Écueil, a small village in the northern part of the Montagne de Reims, a few kilometres south of the town of Reims. Frederic grows 3 acres with pinot noir and 1 acre with Chardonnay. The vineyards are spread throughout the immediate area on over 50 small plots. Pinot noir is most often from Eceuil, where the microclimate and soil conditions are eminently suitable for the perfect ripening of this type of grape. On the other hand, the Chardonnay comes from Villers-aux-Noeuds, 3-4 kilometres east of Eceuil. Here Frédéric is so lucky to have a whole plot of approx. 1 hectare. The plot is called “Le Mont Benoit”. The age of the vines is relatively high for vines in Champagne. Frédéric explains that older vines, hard pruning in the spring and a very focused sorting of the grapes at harvest, means that you get concentrated, precise, balanced wines. In the basement, you will find different types of tanks – different sizes, origins, ages, and all this allows Frédéric to find his own style. In addition, he considers each year how each plot is vinified.

Frédéric describes his approach to production as follows:

In the vineyards, we prioritize needlework and preventive methods. Our goal is not to eradicate diseases but to preserve, help or re-establish a vibrant and diverse ecosystem.
Therefore, our vision in the winemaking and maturation of wines in our cellars is not to shape wines according to our desires but to maintain and protect the unique creation from our fragile “Mother Nature”. In this way, we have the opportunity to find and express all aspects, all differences and thus all possible features of our appellation. “

“L´Année – vintage champagne” – 60% pinot noir and 40% chardonnay. Dosage ca. 3 grams pr. Litres. Approx. 2,000 bottles.

“Expression Rosé – vintage champagne” – 100% pinot noir, from lieux dits: Ailys, Chaillots derriere Moutier and Gillys. No dosage. Approx. 1,000 bottles.

“Le Mont Benoît” – vintage champagne: 95% pinot noir and 5% chardonnay Dossage approx. 3 grams / liter.

“Le Mont des Chrétiens”: 100% chardonnay. Dossage ca. 3 grams / liter.

“L´Accomplie” – 70% pinot noir and 30% chardonnay. Dosage 4 grams per. Litres. Approx. 8,000 bottles.

“Les Noues”: The grapes for this wine used to be part of Ouverture but are now a new cuvée. 100% black pinot. Approx. 1,500 bottles

“Expression Nature – vintage champagne” – 100% pinot noir, from lieux dits: Ailys, Chaillots derriere Moutier and Gillys. Extremely old sticks. No dosage. Approx. 1,000 bottles.

“L´Ouverture” – 100% black pinot. Dosage 4 grams per. Litres. Approx. 20,000 bottles.

“Bulle de Rosé” – 70% pinot noir and 22% chardonnay and 8% pinot noir as red wine. Dosage ca. 6 grams pr. Litres. Approx. 5,000 bottles.
